Weekly Meal Plan

In order to save money and consistently eat healthy, I have been trying to meal plan on Sundays and follow my plan throughout the week. So far, it’s been going really well. By Friday, I am usually ready to cheat a little and go out to get appetizers or order pizza 🙂 As a new way to keep my blogging consistent…I will try to blog on Sunday night or Monday morning about the meals I am planning for the week and then let you know how the meals taste later in the week. Sound good??

Here is this week’s plan:

Monday:
Skinny Chicken Pesto Bake from http://www.skinnytaste.com. This was one of the easiest recipes! I ended up buying pesto because I don’t have a food processor, but the pesto recipe looks easy too. I served this with brown rice.

Tuesday:
Leftover Chicken Pesto Bake. Because I bought a lot more chicken than we needed, I am going to have this again tonight. I plan to have some frozen veggies with dinner tonight.

Wednesday:
Crock-pot chili also from http://www.skinnytaste.com. I work on Wednesday, so the crock pot is the easiest way to make sure I don’t get unmotivated to cook. This recipe looks really easy and delicious. I will let you know how it goes!

Thursday:
Probably leftover chili depending on how much is left!!

Friday:
There’s a large possibility that we will go out for dinner or appetizers by Friday night. If not, I will probably use what we have to make a random dinner 🙂

The grocery list for this week was easy! Here it is:
**Organic chicken breasts
**Pesto
**Tomatoes
**Onion
**Grated Parmesan cheese
**Black beans
**Kidney Beans
**Chopped green chillies
**Chick peas
**Tomato sauce
**Diced tomatoes
**Ground turkey breast (I am using elk meat)
**Greek yogurt (plain, nonfat)

How do all of you meal plan?? Or are you more spontaneous?? I am a planner and like to have everything figured out for the whole week 🙂

  1. Your recipes look great! I fix chili a lot in the winter and usually make a large batch. Then freeze some in zip loc bags which are easy to take out when needed. I just made a white chili with chicken, white beans (northern), and diced green peppers. I also bake several chicken breasts or tenders when I have time then use them for either a chicken stir fry with lots of veggies. I serve this with those lil microwave bags of rice in different flavors! we, too, try to eat lite during week so that we can go out on the weekend! Crock pots are an absolute god-send when you work!
